Ingredients
- 200 g softened butter
- 200 g granulated sugar
- 4 eggs
- 200 g pastry flour
- 2 teaspoons baking powder
- 3 medium-sized apples
- Juice of ½ lemon
Method
- Preheat the oven to 175 °C (top and bottom heat).
- Grease a 26 cm springform/cake pan with butter and dust the inside with a thin layer of flour. Tap out the excess flour.
- Peel the apples, remove the cores, and cut 2 apples into small pieces and the third apple into slices.
- Beat the softened butter (or margarine) with the granulated sugar until light and fluffy.
- Add the eggs and whisk until smooth.
- Add the pastry flour and baking powder, and whisk until smooth.
- Add the juice of half a lemon and mix it into the batter.
- Gently fold the apple pieces into the batter with a spatula.
- Spoon the batter into the prepared baking pan and smooth the top.
- Arrange a few thin apple slices in a fan shape on top of the batter for an attractive finish.
- Bake the apple cake in the center of the preheated oven for 50 to 60 minutes. Check whether the cake is done with a skewer. If the skewer comes out clean, the cake is ready.
