Delicious Apple Cake

Nothing beats the smell of a freshly baked apple cake. With just 6 basic ingredients, you can bake a deliciously light apple cake with juicy apple pieces and a golden-brown crust. Perfect with coffee, as a dessert, or simply because you feel like something delicious.

Ingredients

  • 200 g softened butter
  • 200 g granulated sugar
  • 4 eggs
  • 200 g pastry flour
  • 2 teaspoons baking powder
  • 3 medium-sized apples
  • Juice of ½ lemon

Method

  1. Preheat the oven to 175 °C (top and bottom heat).
  2. Grease a 26 cm springform/cake pan with butter and dust the inside with a thin layer of flour. Tap out the excess flour.
  3. Peel the apples, remove the cores, and cut 2 apples into small pieces and the third apple into slices. 
  4. Beat the softened butter (or margarine) with the granulated sugar until light and fluffy.
  5. Add the eggs and whisk until smooth.
  6. Add the pastry flour and baking powder, and whisk until smooth.
  7. Add the juice of half a lemon and mix it into the batter.
  8. Gently fold the apple pieces into the batter with a spatula.
  9. Spoon the batter into the prepared baking pan and smooth the top.
  10. Arrange a few thin apple slices in a fan shape on top of the batter for an attractive finish.
  11. Bake the apple cake in the center of the preheated oven for 50 to 60 minutes. Check whether the cake is done with a skewer. If the skewer comes out clean, the cake is ready.
  12. Let the cake cool in the pan for about 10 minutes. Then remove the springform pan and let the cake cool completely on a rack.

Storage tips

  • Keep the apple cake well covered at room temperature. This way, it will remain deliciously soft for about 3 days.
  • In an airtight container in the refrigerator, the cake will keep for up to 5 days.
  • The apple cake is also suitable for freezing. Wrap it well and store it in the freezer for up to 3 months.

This apple cake is delicious with a cup of coffee or tea. Optionally, serve it with a scoop of vanilla ice cream or a dollop of whipped cream.
