Baking beads are used as blind filling to ensure that the bottom of a sand dough tart, quiche, or other tart base does not rise during baking. You first bake only the bottom of the tart, quiche, or pie with a sheet of baking paper placed on top with the baking beads. Then you remove the sheet of baking paper with the baking beads. After that, the bottom is filled with pastry cream or another warm/cold filling.
